Course: Main Course

Equipment

  • Air fryer
  • Toothpicks

Ingredients

  • lb boneless skinless chicken breasts (680 g)
  • 100 g cream cheese softened
  • 3 jalapenos finely chopped
  • ¾ cup mozzarella (75 g), grated
  • 1 tablespoon Cajun seasoning (15 ml)
  • 1 teaspoon onion granules (5 g)
  • 1 teaspoon garlic granules (5 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt to taste
  • black pepper to taste

Instructions

  • Start by mixing cream cheese, chopped jalapenos, and shredded mozzarella in a bowl. It should feel creamy and come together nicely.
  • Rub the chicken breasts with olive oil, Cajun seasoning, onion granules, garlic granules, salt, and pepper. Make sure to coat all surfaces to maximally infuse flavor.
  • Spoon the cheese mixture onto one side of the chicken and fold over. Ensure it looks like a cozy little pocket without overstuffing to prevent filling from escaping.
  • Use toothpicks to seal the edges of the chicken, keeping the filling inside. After sealing, it should look like a neat bundle.
  • Place the stuffed chicken in the air fryer basket and cook until it’s golden and crispy outside, maintaining a nice browned finish.
  • Allow the chicken to rest for a few minutes before slicing. This period allows the juices to settle back into the meat, enhancing juiciness.

Notes

Storage Tips: Store leftover stuffed chicken in an airtight container for up to 3 days. Reheat in the microwave or air fryer.
Expert Tips: If you notice the filling oozing out, secure it tightly with toothpicks and avoid overstuffing the chicken. Ensure the chicken’s internal temperature does not exceed 165F to avoid dryness. For smoother melting cheese, pre-softening the cream cheese and using shredded mozzarella is beneficial.
Serving Suggestions: Pair with garlic mashed potatoes for a comforting meal, serve with a light salad to balance richness, or accompany with cilantro lime rice for a fresh touch.
Recipe Variations: Add bacon bits to the filling for extra flavor. Replace jalapenos with roasted red peppers for a milder dish. Incorporate fresh herbs like parsley or cilantro.
Ingredient Notes: Use fresh ingredients for the best flavor. When selecting jalapenos, choose firm peppers without blemishes for optimal taste and texture.
