Welcome to “Ashley’s Cooking” where we make chicken cooking easy and enjoyable so that everyone can master delicious poultry dishes and make them a regular part of their meal rotation!
I’ve been there too – standing in the meat section, staring at whole chickens and different cuts, feeling overwhelmed by cooking techniques. You keep ordering rotisserie chicken or takeout because you want home-cooked chicken meals but are unsure of your ability to make them juicy, flavorful, and perfectly cooked every time. Does that sound familiar?
Together, we can break that habit and use any of our tried-and-true recipes to make something incredible from scratch. Each one is directly from Ashley Cass, whose expertise in poultry preparation and flavor development can transform your chicken dinners.
Where It All Began
In 2019, Ashley launched The Mindful Kitchen. She had to abandon the entire effort when COVID struck because of some harsh family issues. She’s back with Ashley’s Cooking now, ready to inspire and bringing some major chicken-cooking energy!
She’s creating special sections for chicken dishes that accommodate different dietary needs and cooking skill levels, totally inspired by what she and her own family love to eat. And get this, she’s incorporating all her culinary knowledge and professional techniques into these recipes too!

Why Focus on Chicken Recipes?
At seventeen, I started working in my first restaurant kitchen and fell in love with the versatility of chicken. I watched experienced cooks transform this simple protein into countless amazing dishes – from crispy fried chicken to elegant braised thighs to perfectly grilled breasts.
But I also saw how many home cooks struggled with chicken, often ending up with dry, flavorless results that left them disappointed. I’d been cooking chicken for years, which made me wonder if there was a way to guarantee juicy, flavorful results every single time.
This prompted me to seek a degree at Loma Linda University in nutrition, because I knew that understanding the science behind cooking would help me create better recipes.

My epiphany came upon reading various culinary textbooks and working with professional chefs. Understanding how different cooking methods affect protein structure helped me develop techniques that guarantee juicy, flavorful chicken by combining scientific knowledge with practical cooking experience.
Now I make chicken recipes with specific techniques and ingredient combinations to maximize flavor while ensuring food safety. This gives me more satisfaction knowing I’m creating meals that are both delicious and properly prepared.
The recipes here aren’t your standard “bake at 350°F and hope for the best” approach. They are methods that have been tried and tested to deliver consistently amazing results. The flavor and texture have not been compromised in any way.

I’m Ashley, the cook and brain behind “Ashley’s Cooking”. I do all the recipe testing and food photography for the site.
I graduated from Loma Linda University with a MS in Nutrition, then worked as a nutrition consultant at a holistic wellness center for a few years. That background helps me understand the science behind cooking and how to create balanced, flavorful meals. When I’m not testing chicken recipes, you’ll find me in my garden growing herbs and vegetables (total plant nerd) or hiking with Pesto, my rescue dog who definitely thinks he deserves some of whatever I’m cooking.
Ashley runs “Ashley’s Cooking” solo as this blog just launched recently. Recipe readers can reach out to Ashley directly through her personal Facebook or Instagram accounts.
Making Recipes
Every recipe on “Ashley’s Cooking” is tested by me multiple times. I take pictures that show you the exact same steps, and I test with different cuts and sizes of chicken until I know they will work perfectly in your kitchen. If something goes wrong, please let me know in the comments; I check them every day and will step in to help resolve any issues.
Our Goal!
I created “Ashley’s Cooking” to share chicken recipes that work every time and teach you the techniques that will make you confident with any cut of chicken. There are no fancy ingredients or complicated skills required – just clear steps, lots of photos, and recipes that deliver juicy, flavorful results. People tell me they love how I walk them through every step, which is the whole point, making delicious chicken accessible to everyone, regardless of cooking experience.
I develop my recipes using what I’ve learned about nutrition and cooking science, taking into consideration the specific goals (crispy skin, tender meat, bold flavors, etc.), and I refine each recipe based on feedback from my family and readers.
