Air Fryer Chicken Fajitas with Bell Peppers
Delicious and easy air fryer chicken fajitas that are gluten-free and packed with flavor.

Ingredients

  • 2 teaspoons chili powder (10g)
  • 1 teaspoon cumin (5g)
  • 1 teaspoon paprika (5g)
  • 1 teaspoon salt (5g)
  • 1 teaspoon white sugar (4g)
  • ½ teaspoon garlic powder (1g)
  • ½ teaspoon onion powder (1g)
  • 1 lb boneless skinless chicken breast (450g), 1/2-inch sliced
  • 2 bell peppers sliced
  • 1 small red onion sliced
  • 2 tablespoons olive oil (30ml)
  • small flour or corn tortillas (use a gluten-free variety if necessary)

Instructions

  • Start by stirring together chili powder, cumin, paprika, salt, white sugar, garlic powder, and onion powder in a bowl. You will notice the fragrant spices creating a warm aroma. This blend is what makes the chicken so flavorful. Just be careful not to make it too spicy if you are sensitive.
  • Toss the sliced chicken, bell peppers, and red onion with the olive oil and your spice mix in a large bowl. As you mix, the colors will pop and the savory smell will fill your kitchen. This step ensures every bite is packed with flavor, but do not overmix or you might break the chicken.
  • Place the chicken mixture in the air fryer basket in a single layer. You will see everything cozied up, but do not overcrowd the basket, or the chicken will not crisp up nicely. Cooking it wisely here makes sure the chicken stays juicy.
  • After a few minutes, add in the bell peppers and onions. The sizzling sound and sweet aroma signify that they are ready to join the party. Timing this right helps achieve tender veggies without overcooking. Just keep an eye out so nothing gets mushy.

Notes

Store any leftovers in a sealed container in the refrigerator and eat within 4 days.
Make your own spice blend for better flavor. Do not overfill the air fryer basket for even cooking. If chicken is still not cooked thoroughly, increase the cooking time by 2 to 3 minutes and check it until the internal temperature reaches 165 degrees F. When vegetables need to be more tender, try cutting them into smaller pieces or extending the cooking time while checking for doneness. If the fajitas taste too spicy, reducing the chili powder in your spice mix will create a milder flavor that still works well.
