Ingredients

  • 2 lb boneless, skinless chicken breasts cut into 8 equal pieces, flattened
  • 8 slices Swiss cheese thinly sliced
  • 4 oz deli ham thinly sliced
  • 2 large egg whites
  • 1 tablespoon water (15ml)
  • ½ cup grated parmesan cheese (50g)
  • ½ cup panko bread crumbs (50g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt

Instructions

  • Start by flattening your chicken pieces until they are even. You want to see a smooth surface that makes rolling easier. Be careful not to pound too hard to avoid creating holes.
  • Lay a slice of Swiss cheese, followed by a slice of ham on each piece of chicken. Be cautious not to overfill; too much stuffing can complicate rolling.
  • Carefully roll each chicken piece around the cheese and ham, keeping it snug. Tuck in the edges to help contain everything while cooking.
  • Mix the egg whites and water in a bowl until it is a bit frothy. This bubbling action indicates it is ready for coating.
  • Dip each chicken roll in the egg wash, then coat it generously with the mixture of parmesan cheese, panko breadcrumbs, and seasonings, ensuring even coverage.
  • Place the chicken rolls in the air fryer basket in a single layer, ensuring not to crowd them. Air fry until golden brown.
  • Once the timer goes off, let the chicken rest for a few minutes before slicing to allow the juices to settle.

Storage Tips: Store any leftover chicken in an airtight container in the fridge for 3-4 days. Reheat in the air fryer, low oven, or microwave.
Expert Tips: If chicken won't stay rolled, secure with toothpicks or kitchen twine. When air frying, leave space between pieces to ensure even cooking; consider frying in batches if needed. If the panko breading is not crispy enough, lightly spray the tops with nonstick cooking spray before cooking.
