Deliciously marinated chicken breasts cooked to perfection in an air fryer, offering a gluten-free option that's simple to prepare.

Ingredients

  • 2 Chicken Breasts skinless, boneless (6-8 oz each)
  • ½ cup Balsamic Vinegar (120ml)
  • ¼ cup Coconut Aminos (60ml)
  • 2 Tbsp Lemon Juice (30ml)
  • 1 Tbsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Avocado Oil Spray
  • Pepper to taste

Instructions

  • Start by whisking the balsamic vinegar, coconut aminos, lemon juice, dried oregano, garlic powder, and onion powder in a bowl. Make sure to mix it well for even seasoning; it is easy to overlook the dry spices clumping together. The aroma will hit you, hinting at the flavor wonders to come.
  • Place the chicken breasts in a resealable bag and pour the marinade over them. Gently massage the bag to coat the chicken completely. You will want to let it sit for at least 30 minutes, but longer is even better since it helps the flavors really soak in. Keep an eye on the chicken; if it sits too long, it can become overly tangy.
  • While the chicken is marinating, preheat your air fryer for a few minutes. You will know it is ready when it starts to warm up nicely, prepping it for that delicious chicken. Do not skip this step, as a well-preheated air fryer means more even cooking and a better crust.
  • Remove the chicken from the marinade and lightly spray each breast with avocado oil. The oil will help achieve a nice golden color while cooking. Just be careful not to overspray, as too much oil can lead to unwanted splatter in your fryer.
  • Place the chicken in the preheated air fryer and set the timer for about 15 minutes. You will hear it sizzling away, and that smell will make your mouth water! Remember to check for doneness; the internal temperature should reach 165 degrees F to avoid undercooking. If chicken breasts are smaller, check for doneness around 13 minutes to avoid dryness.
  • Let the chicken rest for about five minutes after removing it from the fryer. This step allows the juices to redistribute, giving you juicy chicken instead of a dry piece. It is tempting to dig in right away, but patience here is key to enjoying each bite!
