Creamy Avocado Cilantro Pasta Salad is a fresh and tasty dish that makes a lovely addition to any meal. This recipe is not only colorful but super satisfying. It’s a great way to use ripe avocados before they go bad!

This recipe addresses issues with ripe avocados, prevents pasta from sticking, and gradually improves pasta salad flavor without overpowering it with salt.

Creamy Avocado Southwest Pasta - 1

I know how challenging it can be to find a pasta salad that’s both filling and fits everyone’s dietary needs. With my family having gluten allergies and me managing diabetes, it’s important to make a dish that works for everyone. This salad helped me feel at ease when cooking for a crowd.

You’ll love how quick and easy it is to whip up this pasta salad. With just 10 minutes of prep and another 10 for cooking, you’ll have a delicious side ready in no time. Plus, using avocados instead of mayonnaise gives it that creamy texture we all crave.

Why You Will Love This Recipe

  • Texture Galore , The creamy avocado sauce combined with black beans creates a satisfying texture that’s both smooth and hearty, adding a fun bite to each forkful.
  • Zesty Flavor , With fresh cilantro and lime juice, this dish packs a zesty punch that livens up the palate without overwhelming it. You’ll crave every bite.
  • Super Convenient , It’s a quick recipe that comes together in just 20 minutes. Whether you serve it warm, at room temperature, or chilled, it fits any occasion.
  • Fresh Storage , While it’s best enjoyed fresh, any leftovers can be kept in the fridge for a couple of days, which means you can savor the flavors later too.

Ingredient Notes

Creamy Avocado Southwest Pasta - 2
  • Pasta: Go for a small-shaped pasta that grabs the sauce beautifully. If you need gluten-free, any nice gluten-free option works too!
  • Avocados: You’ll want them nice and ripe for that creamy goodness. Give ’em a gentle squeeze; they should feel slightly soft but not mushy.
  • Lime juice: A splash of lime juice brings in that zesty, fresh kick. Freshly squeezed is best, but bottled can work in a pinch.
  • Cilantro leaves: I love cilantro for its unique flavor, but if it’s not your jam, parsley is a great alternative and adds nice green vibes.
  • Canned black beans: These add a hearty touch and some protein to the dish. Just make sure to drain and rinse them before tossing in!

Recipe Tips

  • If pasta turns mushy, stick to the package cooking time and check for al dente doneness a minute before it’s done.
  • When avocados brown quickly, mix in an extra tablespoon of lime juice to keep your sauce looking fresh longer.
  • For a flavor boost, sprinkle in salt and lime juice gradually, tasting as you go to find your ideal level.
  • If your avocado sauce isn’t smooth, blending it in a food processor can help create a creamy texture effortlessly.
  • When pasta sticks together, add your sauce immediately after draining, tossing well to ensure an even coating and zero clumping.

Serving Suggestions

  1. Pair this southwest avocado pasta with grilled chicken for a meal that offers protein and essential nutrients. This dish complements a light white wine to create a refreshing experience during warm weather gatherings.
  2. This pasta is versatile enough for use in other recipes like pasta salads or as a filling in wraps. You can create a cold pasta option by serving it chilled with additional vegetables for picnics and barbecues.
  3. Add a finishing touch with extra cilantro and lime wedges for presentation. A drizzle of lime juice enhances the overall taste and freshness of the dish.

Storage Guidelines

  • To keep your southwest avocado pasta fresh, follow these storage tips:
  • Refrigeration: Store pasta in an airtight container in the refrigerator for up to 2 days. Enjoy chilled or gently warmed.
  • Freezing: Wrap pasta tightly in plastic wrap, then place in a freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge.

Recipe Variations

  • You can use gluten-free pasta as a substitute for the small-shaped pasta, keeping the texture while catering to dietary needs.
  • Add 1 teaspoon garlic powder and 1 teaspoon cumin to the mix for extra flavor, enhancing the southwestern profile of the dish.
  • Either substitute black beans with 15 ounces of chickpeas for a different protein source, or toss in diced jalapenos for a spicy kick.
  • To serve more people, scale the recipe up to 1 pound of pasta and double the remaining ingredients for a generous portion.

Equipment

  • Large pot
  • Food processor
  • Metal s-blade
  • Large Bowl

Ingredients

  • ½ pound small-shaped pasta (226.8 grams), gluten-free if needed
  • 2 medium ripe avocados
  • 1-2 cloves garlic roughly chopped
  • 2 Tablespoons lime juice (30 ml)
  • 2 Tablespoons olive oil (30 ml)
  • ¼ teaspoons ground cumin
  • 1 teaspoons kosher salt divided
  • ½ cup cilantro leaves (15 grams), plus extra for garnishing
  • 1 cup grape or cherry tomatoes (150 grams), halved or quartered
  • 3-4 scallions trimmed and thinly sliced
  • 1 cup corn kernels (150 grams), frozen, fresh, or canned
  • 15 ounces canned black beans (425 grams), drained and rinsed
  • 1 teaspoons kosher salt for seasoning

Instructions

  • Start by boiling a pot of water and toss in your small-shaped pasta. You will know it is ready when it is al dente, typically around 8 to 10 minutes. Keep an eye on it so it does not get mushy, which can ruin the dish.
  • In a food processor, add your ripe avocados, garlic, lime juice, olive oil, ground cumin, and some salt. Blend until you get a creamy, smooth consistency that smells fresh. Scrape down the sides to get every bit mixed in; otherwise, you could end up with chunks of avocado.
  • Fold in the cilantro leaves into the avocado mixture gently. This step adds a vibrant freshness to the sauce.
  • Toss the drained pasta with the avocado sauce until it is well-coated and looks glossy. Be careful not to overmix, or the pasta might break apart.
  • Stir in your halved tomatoes, sliced scallions, and corn. The colors should pop, and the mixture will feel hearty. Be light-handed to keep the veggies intact, as they provide a nice crunch.
  • Gently fold the rinsed black beans into the pasta mixture. Take your time to mix, but avoid crushing the beans.
  • Top with extra cilantro for that fresh, green touch before serving. The dish should look inviting and smell incredible.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days.
Expert Tips:
– If pasta becomes mushy, make sure to follow the cooking time on the package and check for al dente readiness a minute before it is done.
– When the avocado sauce turns brown quickly, add an extra tablespoon of lime juice to help preserve its color.
– To adjust flavor, gradually add more salt and lime juice to fit your preference.
– If your avocado sauce is not smooth, blending it in a food processor can help create a creamy texture effortlessly.
– When pasta sticks together, add your sauce immediately after draining, tossing well to ensure an even coating and zero clumping.
