Vibrant Spinach Pasta Salad - 1

I often struggle with finding a pasta salad that doesn’t end up tasting bland. You know how it is when you’re trying to keep meals interesting, especially when cooking for friends or family. This recipe helps me add excitement to my table without a lot of fuss.

What really works about this salad is the orecchiette pasta. Its shape holds onto the dressing, so no one gets a soggy bite. You can prep this in just 15 minutes, and it only takes another 10 minutes to cook, making it perfect for busy days or meal prep.

Why You Will Love This Recipe

  • Fresh and Flavorful , This salad bursts with zesty and tangy flavors from fresh spinach, tomatoes, and feta. It’s anything but bland, making each bite interesting.
  • Great Texture , The orecchiette pasta’s unique shape holds onto the dressing and adds a satisfying bite, keeping the salad both creamy and crunchy.
  • Quick and Convenient , With just 25 minutes from start to finish, this dish is ideal for busy days when you want a nutritious meal without a lot of fuss.
  • Meal Prep Friendly , Leftovers are easy to store and can last up to three days, making this salad a great choice for lunches throughout the week.

Ingredient Notes

Vibrant Spinach Pasta Salad - 2
  • Orecchiette pasta: This pasta’s little ear shape holds onto the dressing and veggies nicely. If you can’t find it, try rotini or farfalle for a similar vibe.
  • Fresh spinach: Adds a nice crunch and vibrant color to the salad. Pick bright green leaves and avoid any wilting or yellowing for the best taste.
  • Crumpled feta cheese: Provides a creamy, tangy kick! Look for a good quality block feta that you can crumble yourself, or try goat cheese if you prefer.
  • Lemon: The juice brings a bright, zesty flavor that really pulls everything together. Go for a juicy lemon, avoiding ones that feel hard or too light.
  • Olive oil (or avocado oil): Adds richness and helps emulsify the dressing. Use a good-tasting extra virgin olive oil or a smooth avocado oil for a buttery feel.

Recipe Tips

  • If pasta clumps after cooking, tossing it immediately with a tablespoon of oil helps keep it separate and smooth.
  • When dressing separates after refrigeration, giving it a good shake before serving helps mix everything back together nicely.
  • If the salad tastes bland, adding a teaspoon more salt, pepper, or a splash of vinegar can really brighten the flavors.
  • For a cooler option, chilling the salad for at least 30 minutes before serving provides a refreshing taste that everyone will enjoy.
  • If you want a stronger flavor in your dressing, try adding a tablespoon of Dijon mustard to enhance the overall taste.

Serving Suggestions

  1. Serve spinach pasta salad with grilled chicken or shrimp for a satisfying meal. Pair it alongside veggie burgers for a vegetarian option.
  2. Spinach pasta salad also works well as a side dish at barbecues or potlucks. It can be combined with roasted vegetables for added nutrition.
  3. This salad can benefit from a drizzle of balsamic vinaigrette or lemon dressing for more flavor. A sprinkle of feta cheese also complements the salad well.

Storage Guidelines

  • To keep your spinach pasta salad fresh, follow these storage tips:
  • Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 3 days and maintain freshness.
  • Freezing: Wrap in plastic wrap or aluminum foil, then place in a freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator.

Recipe Variations

  • You can use 12 oz of farfalle or penne pasta instead of orecchiette for a different pasta shape.
  • Add 1 teaspoon of garlic powder or ½ teaspoon of red pepper flakes for extra zest.
  • Either cherry tomatoes or bell peppers can complement the salad for added color and taste.
  • If making for a larger group, increase to 24 oz of pasta and 4 cups of spinach.

Course: Salad
Cuisine: Mediterranean

Equipment

  • Large Bowl
  • Mason jar
  • Colander

Ingredients

  • 12 oz orecchiette pasta (340g)
  • 2 cups chopped fresh spinach (60g)
  • 1-2 cups fresh diced tomatoes (150-300g)
  • 1/4-1/2 cup finely diced red onion (40-80g)
  • ½ cup crumbled feta cheese (75g)
  • 1 lemon juiced
  • ¼ cup olive oil or avocado oil (60ml)
  • 1 TBSP red wine vinegar (15ml)
  • 1-2 cloves garlic (smashed and minced)
  • ½ tsp dried parsley (1.5g)
  • ¼ tsp dried basil (0.5g)
  • ¼ tsp dried oregano leaves (0.5g)
  • ⅛ tsp sea salt (a pinch)
  • ⅛ tsp black pepper (a pinch)

Instructions

  • Start by boiling water in a large pot. Add the orecchiette pasta and cook until it is tender yet al dente, tasting for that nutty flavor, which should take about 9-10 minutes. Remember to stir occasionally to prevent sticking.
  • In a large bowl, whisk together the lemon juice, olive oil, red wine vinegar, minced garlic, dried parsley, dried basil, dried oregano, sea salt, and black pepper until it is well blended. The fresh herb aroma will be pleasant. Ensure to season adequately to avoid a bland salad.
  • Once the pasta is cooked, drain it and immediately toss it in the dressing while it is still warm. This step helps the pasta absorb the dressing flavors. Be careful not to overmix, so the pasta does not mush up.
  • Gently mix in the chopped spinach, diced tomatoes, finely diced red onion, and crumbled feta cheese. The dish will become vibrant with color. Avoid overmixing to keep the veggies intact.
  • Taste the salad to ensure a zesty balance from the lemon and seasoning. If necessary, add a pinch more salt or black pepper for enhanced flavor.
  • Cover the salad and let it chill in the fridge for approximately 15 minutes. This resting period allows the flavors to meld beautifully. If serving later, remember to shake the salad well beforehand as the dressing may separate.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, consume within this timeframe. If the pasta clumps together after cooking, toss it immediately with a tablespoon of oil to keep it smooth. A good shake before serving will mix the ingredients back together if the dressing separates.
