  • ½ cup blue cheese dressing (can substitute ranch)
  • 2 Tablespoons butter (28 g), divided
  • ½ cup yellow onion (75 g), diced
  • 1 stick celery (about 100 g), diced
  • 3 cloves garlic minced
  • 14.5 oz. canned diced tomatoes (410 g), undrained
  • 4 cups chicken broth (960 mL)
  • 1 lb. penne pasta (454 g)
  • ½ cup buffalo sauce (120 mL)
  • 8 oz. cream cheese (226 g), softened and cubed
  • 1.5 cups cheddar cheese (170 g), shredded
  • 1 cup mozzarella cheese (113 g), shredded
  • 1 pinch red pepper flakes optional
  • 2 tablespoons cold butter (28 g), optional

Instructions
